Allergen and Dietary Considerations

This course includes practical training in the preparation and handling of a variety of food types, including meat, seafood, poultry, dairy, and other common allergens. Training is conducted in commercial kitchens environments that are not certified allergen-free and may contain traces of nuts, dairy, gluten, and shellfish.

Learners with allergies, dietary restrictions, or cultural practices that may impact participation in practical tasks are encouraged to notify the RTO prior to commencement. Reasonable adjustments will be considered where possible; however, participation in all practical units is required for successful course completion.

Australian Professional Skills Institute offers specialised Patisserie training courses to enable you to develop a range of specialist, innovative skills and techniques as a Patissier in a hotel kitchen, bakery or cake shop.

You will master a range of fine patisserie skills to create visually stunning and delicious cakes, pastries, gateaux, decorative chocolate and sugar work and buffet display pieces.

This course is designed to prepare students for a career as a Pastry Chef or Chef de Partie.  Well trained and qualified staff in this field are in high demand by leading hotels, restaurants and boutique patisseries.

For students who have completed the Certificate III in Commercial Cookery, by undertaking an additional six months in Patisserie entitles you a dual qualification.  Specialist patisserie skills can complement  your commercial cooking skills and provide chefs/cooks  with additional employment opportunities, making you the “employer’s choice” in a commercial kitchen.
